This Carrot-Ginger Soup is a product of my parents giving my about 30-minutes notice that they were coming over the other day. With limited ingredients and very little time, I whipped up this delicious soup that couldn’t be easier to make. If you have been looking for a simple soup to welcome the colder weather, look no further!
The base of the soup is vegetable broth—you can either make this yourself or source an organic, high-quality vegetable stock. When I am in a pinch, I like to use Kallo vegetable stock cubes. They are organic and even have a yeast-free vegetable option.

Ingredients
1kg (about 8 cups) carrots, roughly chopped
5 cups water (or broth)
2 veg stock cubes (if you are not using broth! I use the yeast-free organic Kallo stock, which is 100% worth ordering from Europe if you are in the US)
1/3-1/2 cup extra virgin olive oil
4-8 tbsp fresh ginger or ginger juice (taste to your liking)
1/3 – 1/2 red chili (about an inch)
1 tsp sea salt (use more to taste)
Instructions
1. Boil carrots in 4-5 cups water (or broth) until soft (about 20 minutes).
2. Add carrots and the cooking water to a high speed blender (option to let cool first and then heat soup again later to avoid harmful chemicals from the blender container leaching into the soup!). Add your vegetable stock, chili, and half your ginger. Blend until smooth.
3. Once smooth, blend again, streaming in olive oil.
4. Taste! Add salt and more ginger to your liking. I wanted ours extra spicy so I added some additional fresh ginger juice for a kick in addition to the fresh ginger I had already added.
I happened to have some basil-arugula pesto and curry roasted cashews on hand, which went wonderfully with this soup. Any salted nut or seed will work great as a topping, as will any pesto. The next time I buy carrots with the tops on, I plan to make this soup and top it with carrot top pesto. Yum!
