Detoxifying Raw Mango Ginger Soup with Cilantro Cashew Cream

Ingredients

  • Soup
  • 2 large mangoes
  • 1 red onion
  • 1 cup purified water
  • 1 small chili (or to taste)
  • Juice from 2 limes
  • 12 tsp chopped ginger (depending on how much you like)
  • Cashew cream
  • 3/4 cup cashews, soaked overnight
  • 1/4 cup purified water
  • Juice from 1/2 lime
  • 1/4 cup cilantro, chopped
  • 1/4 cup parsley, chopped
  • 1 tsp raw apple cider vinegar
  • 1/4 tsp pink himalayan salt

Instructions

  1. Add cashew cream ingredients into the blender and blend until smooth and creamy. Store in a glass jar or bowl.
  2. Rinse the blender out, then add soup ingredients into the blender. Blend until silky smooth. Add more water if needed.
  3. Fill bowls with soup and add a heaping spoonful of cashew cream. Garnish with cilantro and/or parsley.

Notes

If you don’t have a Vitamix or one of the other super high-speed blenders and you’re having trouble achieving a smooth consistency, a trick is to start with the liquid, add 1/4 of the ingredients, blend until smooth, then add the next 1/4 and so on.
