Perfect as a light lunch or dinner, this recipe for raw zucchini noodles with super-green basil avocado cream is full of flavour and so nourishing. It took me a while to get used to eating raw zucchini, but I’m so glad I kept trying because this dish would never have come into my life. I can’t count on two hands the number of times I’ve made this in the last two months! I’m more likely to eat unhealthy when wanting a savoury meal, which is why I love this recipe because it satisfies all my cravings and is totally guilt-free – it’s fully raw, probiotic, a great source of healthy fats, super-alkaline forming and it even has hidden greens in the sauce (hence ‘super-green’)!
Served raw or heated, avocado cream sauces are delicious and versatile. The raw zucchini noodles here paired so well with the raw avocado cream (love the crunch of zucchini) but you can also use shirataki noodles or any pasta that you like. If you would prefer to warm the cream up, mix the avocado cream with the pasta in the pot for 1 minute once you’ve turned off the heat, as fully cooking the avocado will change the flavour. Ingredients
- Zucchini Noodles
- 1–1.5 medium zucchini
- Basil Avocado Cream
- 1 large avocado
- 3 leaves lacinto kale (or 2 handfuls greens of choice)
- 2/3 cup purified water
- 1 small handful fresh basil (about 3 tsp if using frozen)
- 1 tbsp raw apple cider vinegar
- 1 tbsp lemon juice (or juice from 1/2 small lemon)
- 1/4 cup hemp seeds
- 1 medium garlic clove
- 1/8 – 1/4 tsp pink himalayan salt
- Optional
- 1 handful cherry tomatoes
- 2–3 basil leaves, chopped
- Pepper to taste
Instructions
- Turn zucchini into zucchini noodles (or ‘zoodles’) using a spiralizer.
- Blend avocado cream ingredients in food processor or high speed blender until smooth and creamy.
- Pour avocado cream over zucchini noodles.
- Optional: Garnish with cherry tomatoes, basil and pepper.
Notes
If you don’t have a Vitamix or similar high-speed blender, a trick is to start by blending the liquids (water, lemon juice and apple cider vinegar) with the greens (kale, spinach or other). Once the greens are fully blended, add the rest of the ingredients one by one.
This is a really great spiralizer from OXO, bought at Sur La Table. I love it because its cheap and so small – it costs $15 and takes up almost no kitchen space. Before I bought mine, I was convinced that it was one of those appliances that I would whip out maybe once a month. Little did I know I would be totally wrong – spiralized vegetables are so fun to eat and you can spiralize way more than just zucchini. Some of my favourite vegetables to spiralize are turnips, beets and sweet potatoes, all delicious and easy to roast or use in a salad 🙂
In relation to current events, one of my friends posted today, “Progress isn’t always a straight line, it’s often two steps forward and one step back: more like a cha-cha.” I love that, and I think its important to look at the election with this perspective and not lose faith. Because when we lose faith, we lose our future. Whatever we choose to think will be, and we forfeit the chance of a brighter future the second we decide to no longer believe in it. In times like these we must have faith that the Universe has a greater divine path. So often have I found myself thinking ‘thank god this awful thing happened or else I wouldn’t have learned this/had this experience/met this person…‘ We can always turn our circumstances into opportunity, and this election provided us with a realization of the strength and magnitude of the opposition that we face in creating a stronger, more peaceful planet. If anything, this should serve as an indication that now more than ever we need to spread our message of unity, have compassion for those around us (including those we may not agree with) and love more, because love always wins!I’d like to end by sharing this Facebook status by Tara Brach:
