I’m not fully raw but I love raw food. From the way my body thrives after eating it to the amazing flavours and vibrant colours, when raw food is done right it is almost indescribable. Eating becomes meditative, a conscious celebration of life with every bite. When our meals are raw, have few ingredients and are minimally processed, it becomes easier to appreciate the life and energy that went into growing every ingredient. That’s how I feel when I eat this raw mango ginger soup – plus it leaves nothing for the taste buds to miss!
PrintDetoxifying Raw Mango Ginger Soup with Cilantro Cashew Cream
- Yield: 3 1x
Ingredients
- Soup
- 2 large mangoes
- 1 red onion
- 1 cup purified water
- 1 small chili (or to taste)
- Juice from 2 limes
- 1–2 tsp chopped ginger (depending on how much you like)
- Cashew cream
- 3/4 cup cashews, soaked overnight
- 1/4 cup purified water
- Juice from 1/2 lime
- 1/4 cup cilantro, chopped
- 1/4 cup parsley, chopped
- 1 tsp raw apple cider vinegar
- 1/4 tsp pink himalayan salt
Instructions
- Add cashew cream ingredients into the blender and blend until smooth and creamy. Store in a glass jar or bowl.
- Rinse the blender out, then add soup ingredients into the blender. Blend until silky smooth. Add more water if needed.
- Fill bowls with soup and add a heaping spoonful of cashew cream. Garnish with cilantro and/or parsley.
Notes
If you don’t have a Vitamix or one of the other super high-speed blenders and you’re having trouble achieving a smooth consistency, a trick is to start with the liquid, add 1/4 of the ingredients, blend until smooth, then add the next 1/4 and so on.
When we talk about toxin and heavy-metal cleansing it may seem far removed, but the unfortunate truth is that we are exposed to toxins every single day. Fat soluble toxins build up in our cells over time, and can manifest as disease in the long-run. Thankfully, the human body has the ability to detox when given the right tools (i.e. when fed the right foods!) and we can take steps in our daily lives to minimise our exposure. Drinking from a purified water source and buying organic produce are two of the most effective ways to do this.
Life is a blessing but we cannot live in this life and thrive (the way we are intended to, what we were created for, to live our truths and fulfil our purpose!) if we are not mindful about what we put into our bodies.
